Taiwan Dong Ding Oolong Tea

Taiwan Dong Ding Oolong Tea is a classic representation of Taiwanese tea and a standout among oolong varieties. Sourced from Dong Ding Mountain in Lugu Township, Nantou County, this tea is renowned for its exceptional quality and distinctive flavor. Grown at altitudes of 600 to 1000 meters, the unique climate of mist-covered hills and fertile soil imparts a rich aroma and layered taste to the tea leaves.

Key Characteristics

  • Origin and Environment: Dong Ding Mountain features steep terrain, cool temperatures, and significant day-night temperature differences, which enhance the accumulation of nutrients in the tea leaves. The misty and humid climate enriches the tea’s aroma, while the fertile red soil contributes to its rich minerals.
  • Appearance: The leaves are tightly rolled into semi-spherical shapes with a vibrant greenish-yellow hue, reflecting their premium quality.
  • Aroma and Flavor: The tea offers an elegant floral fragrance with subtle fruity notes and honey-like sweetness. The flavor is smooth and rich, with a light roasted finish and a long-lasting aftertaste.
  • Tea Liquor: The tea brews into a golden, translucent liquor with a velvety, refreshing texture that balances lightness and intensity.

Production Process

Dong Ding Oolong Tea is a semi-oxidized tea, with an oxidation level of 15% to 30%, balancing the freshness of green tea with the richness of black tea. Its crafting involves meticulous hand-picking, precise withering and rolling, and light-to-medium roasting to enhance its signature roasted aroma and sweet undertones.

Brewing Guide

  • Water Temperature: 90–95°C (194–203°F).
  • Tea-to-Water Ratio: Use approximately 5 grams of tea leaves per 150 ml of water.
  • Steeping Time:
    • First brew: 30 seconds.
    • Subsequent brews: Increase by 5–10 seconds per brew. Can be steeped 5–7 times to experience evolving flavors.
  • Recommended Utensils: Use a gaiwan or Yixing clay teapot for optimal flavor and aroma extraction.

Cultural Significance and Food Pairing

Dong Ding Oolong Tea is a cornerstone of Taiwanese tea culture, embodying tradition and artisanal craftsmanship. It pairs wonderfully with light snacks like puff pastries, cheese, or nuts, and complements savory dishes such as roasted meats and steamed seafood. Its roasted aroma and sweetness enhance the dining experience.

Experience the ultimate in Taiwanese tea culture!
